St. Patricks Day Menu

One of the favourite Irish dishes I enjoy and I know lots of the Slimtone members make it quite regular is COLCANNON.
Tasty served with grilled sausages etc and easy to make. Simply clean and cook potatoes for approx 10 minutes in lightly salted water. Add shredded cabbage and sliced spring onions and continue cooking for further 10 minutes or until vegetables are soft. Drain water, season with black pepper and mash. Also really tasty when dry fried in a non stick pan.   (I find the ready prepared bags of cabbage and leek available in most supermarkets ideals for this recipe)The Leek and Potato soup included in our March recipes on will also be a good meal served with a chunk of soda bread. Something that surprises everyone is a glass of Guinness is only 100 calories so enjoy.
