ENJOY THE ROYAL WEDDING

 

 

 

Looking for al quick and tasty snack meal while enjoying all the festivities.  The two recipes have been a  firm favourite in our Slimtone classes this week.  

Ham & Mustard Potato Salad
Serves 2 – approx 300 cals per serving

Boil 340g/12oz new potatoes until tender and drain well and cut into small chunks. Chop 112g/4oz lean smoked ham into small pieces and mix with the potato together with 2 medium sliced tomatoes, 1 finely sliced small red onion and finely sliced cucumber. Mix 170g/6oz low fat fromage frais and 2 tspn wholegrain mustard together and then add to the bowl with the potato mixture and stir well. Line a salad bowl with lettuce or chinese leaves and spoon in the potato salad. Season with salt and pepper and sprinkle over chopped parsley.  Light mayonnaise can be substituted for the fromage frai if prefered.

Pineapple & Ham Pasta Salad
Serves 1 – approx 255 cals

3oz/84g cooked pasta
2oz/56g lean cooked ham chopped
2oz/56g pineapple in natural juice
1tbspn Hellmans extra light mayo
salt & pepper

Mix all ingredients together and serve with lots of green salad leaves.

Crispy Turkey

Hope you are enjoying your Easter Bank Holiday. We have had a great recipe idea from Victoria at our Sainsburys class. It’s a healthy alternative to crispy duck and everyone who has tried it agrees it is delicious. Cut the dark turkey meat into strips and pop into a pan that has been misted with one cal spray. Season with Chinese 5 spice and heat through. Turn up heat and drizzle over a tablespoon of honey mixing well until crispy. Serve on a bed of salad or stir fry and enjoy. I would also like to thank Victoria for all the ideas she shares with us on a regular basis and congratulate her on losing over five stone. She really looks amazing.

We have some great recipes to share for over the holidays which I know you will enjoy.   

Salmon & Leek Parcels

Serves 2 – approx    350 cals per serving         

2 salmon fillets

2 leeks, trimmed and sliced

Juice of 1 lemon

Salt and pepper or Fish Spice

Place leeks in a heavy based saucepan with 3 tblspn water,  season with  salt and pepper. When leeks are soft spread over the centre of two square pieces of foil.   Top with salmon fillets  season with fish spice,  dill or chives and  lemon juice.  Seal the parcels bringing two edges together, twist the ends and place on baking sheet.  Bake for 10 mins or until salmon is cooked through at 200 C.  Serve straight from oven with 5ozs/140g baby new potatoes and lots of green vegetables.

Fudgy Chocolate & Raspberry Flan

Serves 12 – approx 150 cals per slice

150g/6oz low fat spread

100g/4oz reduced fat digestive biscuits, crushed

8 tblspns of splender brown sweetener. (if not available use half spoon granulated sugar)

125g/5oz self raising flour

25g/1oz cocoa powder (always dissolve cocoa powder in a little water leave to stand for a few mins before adding to cake mix)

150mls skimmed milk

To Decorate

1tbs icing sugar

2 tbs cocoa powder

100g/4oz raspberries

40g/1½oz white chocolate melted

Preheat oven 190˚c/170˚f/gas mark 5.  Melt 2oz/56g of the spread in a saucepan add biscuit crumbs, tip into a flan tin (20cm approx 8”) and press them down firm.  Cool for 15 mins.  Beat the rest of the spread with the brown splender sugar until creamy, then add the flour and the cocoa mix.  Beat gently until all combined.  Spoon over the crumbs and cook for 20-30 mins until firm to touch.  Let this cool then sprinkle over the icing sugar and cocoa powder place on the raspberries and drizzle over with the melted white chocolate.  Slice in 12 small pieces.  This can also be frozen; will keep in freezer for up to 3 months

Thank you for all your good wishes over the last few weeks. It hasn’t been an easy time, but knowing so many people have been thinking of me has been such a support. Hearing the many stories and memories about Gwyn and my Mum has been lovely – and I know we’ll continue to share these for a long time to come. Thank you.
