ENJOY THE ROYAL WEDDING

 

 

 

Looking for al quick and tasty snack meal while enjoying all the festivities.  The two recipes have been a  firm favourite in our Slimtone classes this week.  

Ham & Mustard Potato Salad
Serves 2 – approx 300 cals per serving

Boil 340g/12oz new potatoes until tender and drain well and cut into small chunks. Chop 112g/4oz lean smoked ham into small pieces and mix with the potato together with 2 medium sliced tomatoes, 1 finely sliced small red onion and finely sliced cucumber. Mix 170g/6oz low fat fromage frais and 2 tspn wholegrain mustard together and then add to the bowl with the potato mixture and stir well. Line a salad bowl with lettuce or chinese leaves and spoon in the potato salad. Season with salt and pepper and sprinkle over chopped parsley.  Light mayonnaise can be substituted for the fromage frai if prefered.

Pineapple & Ham Pasta Salad
Serves 1 – approx 255 cals

3oz/84g cooked pasta
2oz/56g lean cooked ham chopped
2oz/56g pineapple in natural juice
1tbspn Hellmans extra light mayo
salt & pepper

Mix all ingredients together and serve with lots of green salad leaves.
