We all know the traditional treat to celebrate St David’s Day is with Welsh Cakes. Try our tasty recipe I know you will enjoy,

Place 454g/1lb flour,200g/7ozs half fat butter, 112g/4ozs caster sugar into bowl, and rub together until mixture resembles bread crumbs. Add 168g/6ozs sultanas and mix together with 2 medium sized eggs to a rolling consistency. If too dry add a small amount of water. Roll out to about quarter an inch thickness and use a two and half inch cutter to make approximately 48 cakes. Coat bakestone with one calorie cooking spray and cook Welshcakes until golden brown. Enjoy at approx 70 calories each. Lurpack Light is highly recommended in this recipe or any of the half fat supermarket brands.

What are you giving up for Lent?

So many made their New Year’s Resolution to lose weight and eat healthy, unfortunately for so many these had been broken before the decorations were packed away. What have crept back into your daily diet that could be avoided during Lent. You may be surprised just how much you could lose by Easter simply by avoiding sugar in your tea and coffee (the new sweetener Truvia is really popular with the members and no after taste like some artificial alternatives). Avoid takeaways and make your own fakeaways. The economy jars of curry and sweet and sour sauces in the supermarkets are fab and with cooked chicken, onions, mushrooms etc. make a quick and inexpensive meal. Also, you could see half a stone melting away during the next few weeks. Using low fat cheese spread instead of butter is another tasty way of saving the calories. Enjoy you pancakes this Shrove Tuesday with our popular Slimtone recipe which all the members enjoy.

PANCAKES (basic recipe) Makes 8-10 pancakes

Sieve 4oz/112g flour and pinch of salt into bowl, add 1 medium size egg and gradually beat in ½ pint of skimmed milk until a smooth creamy batter.  Mist non-stick pan with low cal cooking spray, pour in 2-3 tblspns of the batter mixture (enough to cover the base of the pan evenly) cook over a medium heat until golden brown, toss or turn and fry other side. Keep warm between two plates over a pan of simmering water. If using a 7” pan this mixture will make 10 pancakes @ 60 cals each. If using 8-9” pan this mixture will make 8 pancakes @ 75 cals each. Sprinkle with a tspn sugar (20 cals) and lemon juice.  Delicious filled with fresh raspberries, sliced strawberries, blueberries etc and drizzled with aerosol cream or ice cream.
