Many thanks to all the generous Slimtone members who have donated so generously to Ty Hafen Children’s Hospice which is our selected charity.
I am so pleased that we have a cheque for £1,144.00 ready for collection. Also, so exited that this has now taken the total we have donated to local charities since starting Slimtone to just over £40.000.00 (forty thousand pounds) Once again many thank to everyone for your generosity.

LEMON DRIZZLE CAKE
Serves 12 – 195 approx cals per serving
8oz/225g half fat butter
4oz/225g half spoon sugar
4 eggs, beaten
Zest of 2 lemons
Juice of 1 lemons
10ozs/300g plain flour
2 tsps baking powder
Juice of 2 lemons, 1 tbspn icing sugar, 1 tbsps Half Spoon sugar
Preheat the oven to 150C, 300F, Gas Mark 2. Cream together the margarine and Half spoon sugar in a large bowl. Gradually mix in the beaten eggs. Stir in the flour, baking powder and lemon juice and zest. Pour the mixture into a loaf tin and level the top with a knife. Bake in the centre of the oven for 1hr 40 minutes until risen and golden brown. To make the topping, mix together the lemon juice and half spoon sugar and drizzle over the top of the cake while the cake is hot. Allow to cool before slicing. (Ideal for freezing into portions)
Thanks to Julie from our Maesteg class for this delicious recipe who recommends Anchor Lite or Lurpak Lighter half fat butter is ideal for this cake.
