Make your Bonfire Night go with a Bang

The weather has certainly turned colder this week and  our Slimtone members all agree that a warming bowlful of soup is always welcome on a chilly winter’s night.  Our Mexican Chilli Beef Stew  from our popular Soup Book is the perfect hearty meal for the Bonfire Night celebrations and as a winter snack.

Serves 4 – Approx 100 calories per portion

125g/4½oz lean minced beef   – 1 large onion, chopped
1 red pepper, diced-                    1 tin chopped tomatoes
1 small tin red kidney beans        ¾ pt beef stock
½ tsp chilli powder                       1 clove garlic
Salt

Finely dice the onion, red pepper and garlic. Seal the beef over a medium heat and drain off any excess fat. Add onion, red pepper, and garlic and continue cooking until the meat is browned. Add the tomatoes, kidney beans and the stock. Season with salt and the chilli powder and mix thoroughly. Cover and simmer for 30 minutes. Allow to cool and liquidise or blitz with hand mixer to thicken. Enjoy with a slice of French bread.

Make your Bonfire Party go with a Bang

Looking for quick and easy hot snacks to prepare for your bonfire celebrations. Two of the ideas we gave in Slimtone classes this week will go down a treat. Cut into chunks some grilled sausages, add to a large can of baked beans, sitr in brown sauce and serve over hot jacket potatoes. Another favourite is stir fry lots of vegetables with sliced chicken. Warm bread wraps and fill with with stir fry and season with sweet chilli or plum sauce. Serve with Butternut Squash and red pepper soup and you will certainly make everyone’s celebrations go with a bang.
