Have a good Easter

We have some great recipes to share for over the holidays which I know you will enjoy.   

Salmon & Leek Parcels

Serves 2 – approx    350 cals per serving         

2 salmon fillets

2 leeks, trimmed and sliced

Juice of 1 lemon

Salt and pepper or Fish Spice

Place leeks in a heavy based saucepan with 3 tblspn water,  season with  salt and pepper. When leeks are soft spread over the centre of two square pieces of foil.   Top with salmon fillets  season with fish spice,  dill or chives and  lemon juice.  Seal the parcels bringing two edges together, twist the ends and place on baking sheet.  Bake for 10 mins or until salmon is cooked through at 200 C.  Serve straight from oven with 5ozs/140g baby new potatoes and lots of green vegetables.

Fudgy Chocolate & Raspberry Flan

Serves 12 – approx 150 cals per slice

150g/6oz low fat spread

100g/4oz reduced fat digestive biscuits, crushed

8 tblspns of splender brown sweetener. (if not available use half spoon granulated sugar)

125g/5oz self raising flour

25g/1oz cocoa powder (always dissolve cocoa powder in a little water leave to stand for a few mins before adding to cake mix)

150mls skimmed milk

To Decorate

1tbs icing sugar

2 tbs cocoa powder

100g/4oz raspberries

40g/1½oz white chocolate melted

Preheat oven 190˚c/170˚f/gas mark 5.  Melt 2oz/56g of the spread in a saucepan add biscuit crumbs, tip into a flan tin (20cm approx 8”) and press them down firm.  Cool for 15 mins.  Beat the rest of the spread with the brown splender sugar until creamy, then add the flour and the cocoa mix.  Beat gently until all combined.  Spoon over the crumbs and cook for 20-30 mins until firm to touch.  Let this cool then sprinkle over the icing sugar and cocoa powder place on the raspberries and drizzle over with the melted white chocolate.  Slice in 12 small pieces.  This can also be frozen; will keep in freezer for up to 3 months

What are you giving up for Lent

Slimtone members have been really surprised at just how much extra weight they can be losing by watching those “little extras” that sometimes creep back into our diet. Just avoiding that little cream egg when collecting the daily newspaper and you could lose two pounds. Saying “no” to the half a bottle of wine in the evening another three and half pounds. I know you would not think about having two take aways per week but if you know a friend who does let them know they can lose a half a stone by Easter and save the £££££££ Let us know what treats you are giving up this Lent….

Easter Eggs

This week we have been chatting about Easter treats in all the classes. If you want to burn off the calories in a Cream Egg for example you would have to skip for approx 17 minutes. We chat about only one ounce of chocolate nibbled off a Easter Egg is 150 calories. I always finish off by reminding everyone that Chocolate Makes Your Clothes Shrink….. As they were discussing Easter Eggs on GMTV Breakfast Time yesterday I sent them an email to remind all their listeners that if they indulged themselves with lots of chocolate this Easter they too would find that it certainly does shrink your clothes. I was really pleased to have a mention at the end of the programme giving the listeners the same advice as our class members.
