If you are having B.B.Q’S this Bank Holiday Weekend the following are some of our favourite Slimtone salad recipes which are simple to prepare and help with your “5” a day.
**SLIMTONE SALAD BOWL.
Line your salad bowl with a selection of rocket, watercress, crispy or continental lettuce and top with crunchy cucumber, cherry tomatoes, peppers, radish, celery, grated carrot, bean sprouts etc. I enjoy adding broccoli, fresh peas, sweetcorn and beetroot which all add to the flavour and for added zing add some chopped apple, grapes, sliced strawberries etc.
Roast Vegetable and Pasta Salad
Mist a selection of vegetables with one calorie cooking spray and pop into oven to roast. Button Mushrooms, Sliced red onions, Peppers, Butternut Squash, Sweet potato etc. are all ideal. Meanwhile cook 56g/2oz dried weight pasta and stir into roasted vegetables. Dress with balsamic vinegar or low calorie vinaigrette/ French dressing.
Hawaiian Rice Salad – Serves 1
Cut into bite sized pieces2ozs/56g pineapple, 50g/2oz lean ham and ½ red pepper. Mix with 168g/6ozs cooked rice or pasta and serve with lettuce, rocket, cucumber and tomato. (Ideal as packed lunch).
Rice Bowl – Serves 1
Mix 56g/2oz smoked haddock fillet, poached and flaked, 168g/6oz cooked rice (56g/2oz dry weight) 1 medium egg hard boiled and chopped, 1 tablespoon cooked frozen peas together in a bowl, serve with Slimtone salad bowl or stir fried vegetables. *** Prawns, salmon, tuna or ham could be substituted for haddock.
Potato and Crispy Bacon Salad – Serves 1 s
Halve 140g/5oz of cooked baby new potatoes in skins. Slice 2 grilled bacon rashers or wafer thin ham and 3 spring onions. Mix together with 2 level tblspn Hellman’s Extra Lite mayo. Serve with your Slimtone Salad Bowl.
Pineapple & Ham Pasta Salad – Serves1
Mix together; 84g/3oz cooked pasta shells, 56g/2oz lean chopped ham, 56g/2oz pineapple in natural juice, 1 tblspn peas & sweetcorn, 1 tblspn low-cal mayonnaise. Season lightly with salt and black pepper. (canned mandarin oranges instead of the pineapple is also really tasty.
WHAT’S NEW – HAVE YOU SEEN THE NEW PHILADELPHIA CREAMY PEPPERCORN SAUCE. THIS IS DELICIOUS SERVED WITH CHICKEN, PRAWNS AND PASTA AND WOULD BE IDEAL SERVED WITH A BUFFET OR B.B.Q. THE MUSHROOM AND GARLIC AND HERB ARE FIRM FAVOURITES WITH OUR MEMBERS
ALSO, THEY CAN BE KEPT IN THE ‘FRIDGE AFTER OPENING FOR SEVEN DAYS. SO GREAT FOR A SAUCE SERVED WITH FISH, CHICKEN OR PASTA.
