Julie Richards is just starting out on her journey to lose weight, get fit and raise lots of money!

At the end of January 2014, Julie’s 11 year old son, Geraint, suffered a catastrophic asthma attack causing him to have a cardiac arrest and leaving him severely brain damaged. From that moment on, life changed dramatically for the Richard’s family.

“Food has always been my comfort, and in the last 14 months even more so. We spent 5 months in hospital in Cardiff, then another 3 months in hospital in Surrey. We were with Geraint every moment, learning what to do, which exercises would help and generally providing support.

We weren’t eating properly, just grabbing whatever came to hand. And friends and family, at a loss to know what they could do to help, cooked for us – cakes, pasties, big home-cooked dinners that we could just pop in the microwave. I was never a light-weight, but I’ve put on over 2 stone in that time. Now at a size 26 top and size 22 trousers, I knew I had to do something about it.

Like most people, I know what I have to do to lose weight, BUT I needed the motivation. I think you have to want to lose weight, to do it for yourself. And this time, I’ve got motivation by the bucketful!

I worry about Geraint all the time. I need to be around for him now and in the future. It’s no good being out-of-breath and tired all the time. I need to be fit and healthy and to come out of my comfort zone. The best thing I can do for him right now is to lose weight – and if I’m sponsored for every pound I lose, then I can raise money for the Trust Fund we’ve set up for him for his future.

So Slimtone, here I am.

I’ve known Marie for a long time and Linda, who runs the Tondu class, is a good friend too. I know that with their help and support, I’m going to succeed. I’ve got no excuses and the Lifestyle Plan is ideal. Everything is so tasty and the whole family can eat the same thing – I can even have my favourite Sunday roast.

I’m exercising too – and this from someone who hates it with a passion. I just don’t understand how anyone can go to a gym and enjoy it! But I do love walking, oh yes and chatting! So every week after class I’m joining Linda and some of the other Slimtone members for a walk and a chat – exercise can be fun, after all!

At my first weigh-in I was 16 stone 2¼lbs. Marie had brought along a 5lb lump of fat – this is how much you can expect to lose every month! It was horrid. No wonder I’m out-of-breath and tired, this extra weight is like carrying a small child around with me all the time!

My journey has begun – my target is to lose 5 stone in the next 12 months.  I’ve weighed, I’ve measured and I’ve had my cholesterol checked. CONGRATULATIONS TO ALL OUR SLIMTONE MEMBERS

Excellent weight losses in all the classes last week and it’s great to see everyone “melting away”. Really looking forward to seeing this weeks results in our SIX WEEKS SUMMER CHALLENGE and once again congratulations to you all. If you are having B.B.Q’S this Bank Holiday Weekend the following are some of our favourite Slimtone salad recipes which are simple to prepare and help with your “5” a day.

**SLIMTONE SALAD BOWL.
Line your salad bowl with a selection of rocket, watercress, crispy or continental lettuce and top with crunchy cucumber, cherry tomatoes, peppers, radish, celery, grated carrot, bean sprouts etc. I enjoy adding broccoli, fresh peas, sweetcorn and beetroot which all add to the flavour and for added zing add some chopped apple, grapes, sliced strawberries etc.

Roast Vegetable and Pasta Salad

Mist a selection of vegetables with one calorie cooking spray and pop into oven to roast. Button Mushrooms, Sliced red onions, Peppers, Butternut Squash, Sweet potato etc. are all ideal. Meanwhile cook 56g/2oz dried weight pasta and stir into roasted vegetables. Dress with balsamic vinegar or low calorie vinaigrette/ French dressing.

Hawaiian Rice Salad – Serves 1

Cut into bite sized pieces2ozs/56g pineapple, 50g/2oz lean ham and ½ red pepper. Mix with 168g/6ozs cooked rice or pasta and serve with lettuce, rocket, cucumber and tomato. (Ideal as packed lunch).

Rice Bowl – Serves 1

Mix 56g/2oz smoked haddock fillet, poached and flaked, 168g/6oz cooked rice (56g/2oz dry weight) 1 medium egg hard boiled and chopped, 1 tablespoon cooked frozen peas together in a bowl, serve with Slimtone salad bowl or stir fried vegetables. *** Prawns, salmon, tuna or ham could be substituted for haddock.

Potato and Crispy Bacon Salad – Serves 1 s

Halve 140g/5oz of cooked baby new potatoes in skins. Slice 2 grilled bacon rashers or wafer thin ham and 3 spring onions. Mix together with 2 level tblspn Hellman’s Extra Lite mayo. Serve with your Slimtone Salad Bowl.

Pineapple & Ham Pasta Salad – Serves1

Mix together; 84g/3oz cooked pasta shells, 56g/2oz lean chopped ham, 56g/2oz pineapple in natural juice, 1 tblspn peas & sweetcorn, 1 tblspn low-cal mayonnaise. Season lightly with salt and black pepper. (canned mandarin oranges instead of the pineapple is also really tasty.

WHAT’S NEW – HAVE YOU SEEN THE NEW PHILADELPHIA CREAMY PEPPERCORN SAUCE. THIS IS DELICIOUS SERVED WITH  CHICKEN, PRAWNS AND PASTA AND WOULD BE IDEAL SERVED WITH A BUFFET OR B.B.Q. THE MUSHROOM AND GARLIC AND HERB ARE FIRM FAVOURITES WITH OUR MEMBERS

ALSO, THEY CAN BE KEPT IN THE ‘FRIDGE AFTER OPENING FOR SEVEN DAYS. SO GREAT FOR A SAUCE SERVED WITH FISH, CHICKEN OR PASTA.

Warm up in the Colder Weather

All the Slimtone members have agreed that this week has certainly seen the temperatures drop after our wonderful summer. We all know that porridge is the perfect start to the day but so many say that they don’t have time to prepare the original one in the morning. I always make mine up the night before popping 40g (one half ozs) in a microwave container adding water or milk. In the morning just cook on high in the micro for 2 minutes add a splash of milk and cook for a further minute. Top with blueberries etc. and you will then enjoy a really satisfying meal that will sustain you until lunch time which is so important for weight loss as it will prevent those mid morning munchies. I find the frozen variety of berries really convenient and there is an excellent variety available in all supermarkets. I will be sharing a few more ideas for the colder weather soon.
